Miss Desgland’s Tart Tartin
Dark caramel, crisp pastry and the sweet acidity of apples
Prepare the caramel: Dice the butter in a saucepan, then pour over the sugar. Let cook over low heat for 5 min without mixing, the caramel is made on its own.
Place the caramel on the bottom of a pie dish.
Add the apples cut into large dice, then cover with pastry dough. You can use shortcrust pastry but we make pate brisee in my family, which is almost like shortcrust pastry but is sweeter - Recipe is here:
Bake for 25 minutes in the oven at 210 °C (thermostat 7).
Serve warm with a scoop of vanilla ice cream.
